How to Safely Consume Raw Beef Liver
Source the Best Quality Liver
I start by purchasing several kilograms of the highest quality beef liver I can find. My preference is for grass-fed options sourced directly from local farmers, though I occasionally rely on frozen liver from stores. Always aim for the best quality available.
Portion Control
I consume 150 grams of liver weekly. To facilitate this, I cut the liver into 150-gram portions and freeze them individually. If you purchase frozen liver, allow it to thaw enough to slice it.
Plan Ahead
On days I intend to eat the liver, I remove a portion from the freezer a few hours in advance to ensure it thaws properly.
Slice into Swallowable Bites
I chop the 150 grams of liver into small bites that I can comfortably swallow whole.
Enhance with Flavor
To make the experience more enjoyable, I sprinkle cinnamon on the liver bites and wash them down with water, followed by a sip of heavy cream. The aftertaste reminds me of a porridge-like flavor, albeit a unique twist. If cinnamon and cream aren’t your preferences, you can also try salt and kefir.
